Banana, Caramel and Pecan Muffins



These were the little yummies that I added to the food brigade I brought to my new mommy friend. I sampled one before I sent her the rest - just so I knew I was giving her adequate quality.

Ummm......they were amazing - at least I thought. I believe she mentioned they enjoyed them too. Wow was all I could say. Muffins to me are wonderful little creations, but sometimes they turn out dry and boring. They lack so much in comparison to their cousin the cupcake that has mounds of sugary frosting atop the bread-y cake below. But, in my opinion, these were indeed a treat and I had trouble only eating the one that I allowed myself before giving them away.

Hello Caramel. Hello Banana. Hello buttery pecan and brown sugar and cinnamon topping.

Perfect.

I found these muffins right here over at Dwell on Joy's Blog and I'm so glad I did! She actually showed it with a caramel drizzle over the top, which I think would be absolutely amazing, but I didn't want to make an ooey-gooey mess for the tired mommy. It was still great even without the caramel on top.

You have to try these! I feel like I have said that about every single recipe I have posted this week, but it's true. We have ate so well this week. It's not very often that I have 5 new recipes all hit it out of the park and plant themselves a position in my consistent rotation, but this one made the cut too!

Another fun treat is the slice of banana you lay in the middle of the batter and it's this soft surprise when you bite into your baked muffin. Yum.



Parents Review: Heaven. I wish I would have taken a pic of it sliced in half. The caramel balls (which are easily found at Target) were awesome!

Kids Review: It has sugar, so they were all about it.

Baked Pumpkin Doughnut Holes



You're gonna love these if you like Pumpkin. I have had a slow warming up to all things pumpkin over the past few years, and while I don't enjoy everything with this fall flavor, there's more I like than not.

These are amazing! Super moist. Super pumpkin-y. Super sweet with the crunchy cinnamon-sugar goodness on top.

We made these for our Saturday morning Big Breakfast and they were a hit.

Pumpkin Baked Oatmeal



Oh.

My.

Word.

I have posted recipes for baked oatmeal before, but this one, hands down, takes the cake!

Especially with the fact that it is turning fall outside and the weather is chilly, and I start thinking of things I can enjoy with the almighty can of pumpkin!

This simple recipe is sure to be a hit and will hit every comfort spot you have on a cold morning. I made mine the night before and threw it in the fridge so that I could just wake up and pop it in the oven.

Baked Pumpkin Oatmeal

3 cups quick cooking oats
½ cup brown sugar
1 cup milk
2 tablespoons butter
2 eggs
2 teaspoons baking powder
¾ teaspoon salt
2 teaspoons vanilla
½ teaspoon cinnamon
¾ cup canned pumpkin
¼ cup brown sugar (for the top)
In a large bowl mix together all ingredients except the ¼ cup brown sugar for the top.

Spread into a greased 9×13 pan.

Sprinkle remaining ¼ cup brown sugar on top.

Bake at 350 for 20 minutes.

Serve with milk and enjoy!

Seriously. You have to make this!

Cinnamon Pull-Apart Bread



I made this cinnamon bread for Big Breakfast a few months back. I had found it on a blog somewhere (can't remember where) and thought it sounded just wonderful. I did some searching and found a recipe that was just like the one I made.

Here it is.

Ingredients:
1 unsliced round loaf sourdough bread
1/2 cup butter, softened
1/4 cup powdered sugar
1/4 cup honey
1 tsp pure vanilla extract
1 cup sugar
1 1/4 tsp cinnamon
1 cup powdered sugar
1-2 Tbsp milk

Preheat oven to 350 degrees.

To make Vanilla Honey Butter: Whip butter and 1/4 cup powdered sugar together until smooth; stir in honey and vanilla. Set aside.

Cut the bread lengthwise into 1/2" slices, without cutting through the bottom crust. Spread vanilla honey butter in between slices. Rotate the bread 90 degrees and slice the bread again into 1/2" pieces, without cutting through the bottom crust. Spread more vanilla honey butter in between new cuts. This doesn't need to be perfect - just make sure there is lots of butter in between all the cuts. Combine sugar and cinnamon. Generously sprinkle in between all cuts. (You may have extra butter and cinnamon sugar. It will just depend on how large your bread loaf is.)

Wrap in foil; place on a baking sheet. Bake at 350 degrees for 25-30 minutes, until bread is warm. Unwrap cinnamon bread and place on serving platter. Combine powdered sugar and milk - adding milk until you get the consistency desired. Drizzle icing over bread and serve immediately. Enjoy!




Parents Review: Wow. It was really rich. Almost too rich. It was good, but I think it made my teeth hurt with all the sugar.

Erin's Baked Oatmeal



I posted another recipe for peanut butter baked oatmeal that you also might enjoy, but this one is great too.

My friend Erin made this dish for our Lifegroup one night when we had a Breakfast theme and it was a huge hit.

Here's the recipe. You definitely want to make this one!

Baked Oatmeal
Preheat oven to 350-degrees and grease 9 x 13 pan.
Mix: 3 cups oats, 1 cup brown sugar, 2 tsp cinnamon, 2 tsp baking powder, and 1 tsp. salt.
Beat in 1 cup milk, 2 eggs, 1/2 cup melted butter, and 2 tsp. vanilla.
Optional: Stir in 3/4 cup dried cranberries.
Spread in pan and bake for 40 minutes.

YUM ... you can substitute away too if interested!

Enjoy!!!!

Peanut Butter Baked Oatmeal



I love new breakfast ideas. Instant oatmeal is always an easy choice in the mornings, but this is a fun twist and definitely a little healthier. Plus - it's made with LOVE - you can't beat that! :-)

Peanut Butter Baked Oatmeal

3 cups quick cooking oats
1/2 cup brown sugar
1 cup milk
2 tablespoons butter, melted
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 cup peanut butter

Mix all ingredients together and stir well. Spread in a greased 9×13 pan. Bake at 350 for 20-25 minutes. If you like it a little crunchy on top cook for a few minutes longer. Serve with warm milk poured over top. Enjoy!


I've seen several variations of this recipe and here is one that a friend sent to me. It was rich and yummy. Hope you will give it a try!

Home-made Breakfast Pizza



What's left of it anyway.

I remembered to snap a quick photo of this delicious breakfast pizza right before we gobbled up it's remains.

Remember the home-made pizza dough I shared with you about to make barbecue pizza? Remember that I wasn't all that super-duper thrilled with the pizza itself? Remember that I just said the dough was "good".

I discovered something.

If you let the dough sit in your fridge for 2 or 3 days (like the recipe actually encourages you to do) - it tastes simply amazing - not just good. David and I are kind of obsessed with this dough now and the Hubs actually requests for me to just keep dough on hand at all times to whip up any pizza-like dish that we so desire.

My bro-in-law and sis-in-law are in town, so last week, I made several batches of the dough and had everybody over for pizza night. Yum!! I had one round of dough left from the batch that I didn't use that night and David and I decided to use it for Big Breakfast the next morning. Big Breakfast - for those of you who don't know - is what we call our Saturday morning meal together. It is always something yummy, something cooked with love from our kitchen and it is always BIG. We love it!!

We made this yummy dish and it was a hit with 3 out of the 4. Little Girl wouldn't even try it. Surprise.

We simply took our dough - flattened it out on a (olive oil sprayed) cookie sheet (you could use a pizza stone if you have one) and then brushed it with some more olive oil and a sprinkling of salt over the whole thing. Then - we added a little monterey jack cheese, approximately 5 (not all the way cooked) scrambled eggs, crumbed cooked Maple flavored sausage and a little more cheese, then popped it into a 375 degree oven for around 15 minutes.

Recipe for Basic Pizza Crust

Ingredients
1 teaspoon Instant Or Active Dry Yeast
1-1/2 cup Warm Water
4 cups All-purpose Flour (I substitute 2 Cups with Whole Wheat)
1 teaspoon Kosher Salt
1/3 cup Olive Oil
Preparation Instructions
Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. Let stand for a few minutes.
In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass.
Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.
Note: it’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.
When you are ready to make the pizza, grab HALF the pizza dough (recipe makes 2 crusts) and squeeze the dough toward the bottom to form a nice, tight, pulled ball. You can roll out the pizza with a rolling pin if you’d like, but sometimes it’s just as easy to throw it around and pull and stretch till it feels right. And when the crust is nice and thin, lay it on an oiled baking sheet or pizza pan. Drizzle a little olive oil on the dough and spread it with your fingers. Very lightly sprinkle some salt on the crust.
Preheat oven to 375 degrees. Top your crust with your toppings of choice. Then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.

Grilled Breakfast Pizza



David and I are always looking for fun new recipes to try for Big Breakfast that we do each Saturday with our kids. This one sounded fun and different, PLUS we got to whip out the grill - for breakfast. Yay!

I found the recipe from one of my favorite blog recipe sites - How sweet it is. She got it from the Tasty Kitchen website. Here's the full recipe.

I didn't use the crust recipe they gave, although I bet it would be wonderful. David and I are kind of hooked on the one I made from this recipe. I, again, used half white and half whole wheat flour. Yummy.

I loved that they gave the option to do it in your oven too. Having a pizza stone is ideal. We may try this next time.

Parent's Review: We really liked it. We used maple flavored bacon and it actually didn't have as much of a hickory flavor as I like. Also, I wouldn't mind trying this with scrambled eggs instead of over-easy next-time. It was good, but it's a texture thing.

Kids Review: They didn't try any. So sorry for them. :-)

Cinnamon Roll Pancakes



I handed this new found recipe over to my husband last Saturday morning and asked if he would try his hand at making them while I tried to pre-burn calories with a friend of mine on a 5 mile trail walk.

He said he would.

That sweet man.

And this is what he was makin' while I was walkin'

They even had a home-made buttermilk syrup recipe that was part of the deal and we made that too.

We actually didn't love this stuff. Most people online have raved about it, so I am wondering if we did something wrong. I think we both would've preferred just regular maple syrup.

Plus - these were not overly sweet (which surprised us) and it needed a little more sweetness in the syrup department.

Parent Review: They were labor intensive. David looked tired when I got home. :-) We thought they would be sweeter, but we did really enjoy them and they were fun to try.

Kids Review: Little Girl loved them. Baby boy still wasn't feeling great, so he didn't eat much to tell.

Added: I just landed on THIS RECIPE for cinnamon roll pancakes and HELLO - it calls for adding a cream cheese glaze over the top. Wow!! Plus- the cinnamon swirl looked all crispy and carmelized, so this is a different take. You guys could try either one! Let me know what you think!!

Carli's Sausage Stuffed Waffles



Is it me or does my waffle look like a heart?

It's another Carli-recipe. She made this one up herself one night and served it for herself and her kiddos while her husband happened to be out of town. She loved it and shared it with us. I'm SO glad she did!!

I used Jimmy Dean's Maple flavored sausage, cooked it up, and poured it in my waffle batter. I don't usually use mixes for pancakes or waffles, so I was excited to see that she had a recipe to make the waffles too. The only thing I changed was that I used half whole wheat flour and half white. I like the taste and the fiber is nice too. From scratch is so much better and it really doesn't take much more time.

Parents Review: It was so different and so filling. I could only eat about 3/4 of ONE waffle. It was very thick and dense (some of that was the whole wheat flour I have too), but I loved all the flavors. I poured syrup over it and devoured it. I actually kept eating them cold throughout the day for a snack. Doesn't that sound healthy? :-) David is eating healthy right now and only had a bite, but he really liked them too.
Kids Review: Little Girl said she didn't like it, but then preceded to eat it, so who knows with that picky girl. Baby Boy ate one and begged for me!

SCORE!

Gotta try it!!

Swiss Cheese & Bacon Quiche


This recipe actually calls for diced ham, but I am a bacon girl, and while watching my wait furthermore, I am a TURKEY bacon girl. No difference to me really. I cook mine up in the oven until it is nice and crispy and I love it all the same.

So, I made this recipe awhile back, like WAY back when we first moved to Indiana and we were staying in an apartment while our house was being built.

It feels like a lifetime ago.

Anyway, I remember making this for Big Breakfast one morning along with some Monkey Bread and we were in love.

I made it this time for dinner and it was a hit.

Parents Review: It was so easy and it turned out perfectly. I even used half and half instead of the cream and milk because that is all I had and it was still great.
Kids Review: They both gobbled it up. It was a Christmas miracle!!

Cheesy Apple-Bacon Stratta


I was supposed to make this dish for a yummy brunch treat when my sis and family were in town, however, we ran out of time - as usual. I had my goals set too high for all the baking I was already committed too and I could cook no more!

Soooooo, what I did was make it for our Life Group with our church last Sunday since we were having a Holiday Appetizer-ish theme and I figured this dish would work. I also made BBQ Meatballs, because hello, they are just always a hit.

I am kind of having a love/hate relationship with this new recipe. I found it in my "Betty Crocker's Best Christmas Cookbook" and it made my mouth kinda water.

When I made it on Sunday, I loved the flavor, but couldn't tell if maybe it was....a little under-done? It seemed a little runny or something to me. I didn't see anyone gagging in a corner, but I didn't hear anyone hailing to it either. So, on my first taste tester - it was just o.k., but I will have to say, that I microwaved some up for my lunch today and I ended up having 2 helpings! I think it may have needed to set up a little more or cook some more. I really enjoyed it today.



I know my pics are terrible, but it hit me while we were sitting around the table with our lifegroup friends that I hadn't snapped a picture.

Here's the recipe for this Holiday Strata:

3 Tbsp. butter
3 medium Granny Smith Apples, peeled and chopped (3 cups) (and I like mine really fine)
3 Tbsp packed brown sugar
4 Cups cubed firm bread (I used a loaf of whole wheat french bread)
1 pound bacon, crisply cooked and coarsely chopped (I used Turkey bacon that we cooked in the oven. It was perfect)
2 Cups shredded sharp cheddar Cheese (8 oz)
2 1/2 cups milk
1 tsp ground mustard (dry)
2 tsp Worcestershire sauce
1/4 tsp. salt
1/8 tsp pepper
5 eggs

Grease 2-quart casserole. Melt butter in 10-inch skillet over medium heat. Cook apples in butter 2-3 minutes, stirring occasionally, until crisp-tender. Stir in brown sugar; reduce heat to low. Cook 5-6 minutes, stirring occasionally, until apples are tender.

Layer half each of the bread, bacon, apples and cheese in casserole. Repeat with remaining bread, bacon, apples and cheese.

Mix remaining ingredients; pour over cheese. Cover rightly and refrigerate at least 2 hours but no longer than 24 hours. Heat oven to 350 degrees. Bake uncovered 40-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Parents Review: Loved it after I nuked it a little in the microwave. Definitely make sure it is cooked through.
Kids Review: They never tried it. Too many foods in one casserole for my kids.

Baked French Toast


I love Breakfast foods. I love our Saturdays that are filled with yummy food for our Big Breakfast weekly celebration.

My dear friend Julie gave me an awesome recipe this past week to make for my sister and her family. I have never made it before, so I was nervous that it wouldn't turn out well.

Let me just tell you - WE ALL LOVED IT!

I actually took my picture above of the day I ate leftovers with some eggs over easy. Perfection. They may have tasted even better because I was home alone right after finishing my 90 minute massage my husband had given me from a spa for mother's day this year. (Yes- I FINALLY got to use it.)



Here's the recipe

Baked Georgia Pecan French Toast

4 large eggs
1 cup milk
1/4 cup sugar
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 tsp. vanilla extract
8 ounce loaf French bread, cut into 12 one inch thick slices
1/2 cup chopped pecans
2 tbsp. melted butter

Directions
Lightly coat the bottom of a 12x8 inch glass baking dish with cooking spray. Whisk together eggs, milk, sugar, cinnamon, nutmeg and vanilla in medium bowl. Place bread slices in a single layer in the bottom of the prepared dish. Pour the egg mixture over the bread and turn to coat. Cover and refrigerate overnight.

Preheat oven to 425 degrees. Sprinkle bread slices with pecans and drizzle melted butter over. Bake about 20 to 25 minutes until bread slices are puffed and pecans are deep brown. Serve immediately.

Serves 4 to 6.

Parents Review: We thought it baked perfectly and tasted really great. The pecans burnt just slightly and I actually think I could've done without.
Kids Review: They ate it and said they liked it, but they both only ate a few bites because the cousins were here and they were too distracted to eat!

Home-made Granola & Yogurt Parfait




I have realllllly good memories of my mom's home-made granola baking in the oven late in the evening and then she would pull it out piping hot, we would immediately scoop some in a bowl and pour cold milk over it.

Yum. Mo.

I love to make it every once in awhile for my family as a treat and recently I started making yogurt parfaits with it as a part of our Big Breakfast days on Saturday morning or just for a little something in the afternoon. It's very good.

Here's the Granola Recipe:

(This is a "double" recipe by the way)

8 Cups Quick Oats
2/3 Cup Brown Sugar
2/3 Cup Wheat Germ
2/3 Cup Coconut
2/3 Cup Oil
1/2 Cup Honey
2 Tsp. Vanilla

Heat oats in ungreased 9X13 (or larger) pan in preheated 350 degree oven for 10 minutes. I use my broiler pan. Then, combine brown sugar, wheat germ and coconut and stir into oats. Mix honey, oil and vanilla and add to dry mixture. Stir well. Bake at 350 degrees for 20-25 minutes. Stir every 5 minutes to avoid burning and sticking together. After removing from oven, stir occasionally to cool. Refrigerate.

Side note: When I made this yesterday, I decided to try and lighten this up a bit. I cut my brown sugar, oil and honey in half. I still thought it tasted wonderful. I also threw in about 1/2 Cup slivered Almonds for the last 10 minutes and it was good. Please feel free to make it this way or to eat all the lovely calories that it calls for. I won't judge. :-)

This is how it looks when I pull it out of the oven.


For the Yogurt Parfait, all I do is layer low fat vanilla yogurt, sliced strawberries, scoop of granola and repeat. Very yummy breakfast or snack. (Also - I have to say that I use the Great Value brand from Walmart and it is by far my favorite yogurt!)

Pumpkin Chocolate Chip Scones


Is your mouth watering yet?

You'll notice the pictures are a bit more appetizing and a bit more professional this post. That's because my friend Beth, who I know from back in the Washington D.C. days where our hubbies were on staff together, took these awesome photos for me. She has recently started a photography business (of the people variety) and she also shared with me that she really enjoys the food photo side too, so here you go!

Not only did she take the photos, but her and her family suffered for the blog cause by having to make these pumpkin scones, and then..........eat them. :-)

If you'll remember, I posted the original Scones recipe a few weeks back and Beth had mentioned this awesome variation. I am actually going to be making them myself tomorrow morning for our big breakfast, so you will have to see my reviews at my next posting.

Today - Beth is the girl and I will be letting you all know what HER family thought of this fun little treat.

Here's the recipe with the variation:

Preheat oven to 400 degrees.

2 cups flour
4T Sugar
1 T Baking Powder

MIX ALL TOGETHER

Then add:

1/2 Cup (1 cube) butter cut in with pastry cutter until crumbly (I cube up my cold butter before I throw it in)

Mix in 1 C pumpkin puree + 1 T of milk + 1 tsp of pumpkin pie spice (or a mix of cinnamon, ginger, and cloves).

YOU CAN ADD CHOCOLATE CHIPS HERE IF YOU WANT TO.

Pat into round on a floured cookie sheet. Sprinkle with cinnamon and sugar. Cut into 8 pie wedges. Separate onto cookie sheet.

Bake for 12-15 minutes until lightly golden brown on the bottom.

Pumpkin Pancakes & Big Breakfast


Here it is - only 45 minutes away from midnight - and I am finally getting to the post that I promised for the weekend. BUT - I am getting it done. Better late than never. :-)

Every Saturday morning our family does a breakfast meal together that is more fun than your average bowl of cereal, bowl of oatmeal, cup of yogurt kind of thing. We call it "Big Breakfast".

It's a way to eat some fun things together and just make memories. We love it and we don't allow ourselves to skip it if we can help it in any way.

This Saturday we made one of our favorites at this time of year: Pumpkin Pancakes. We also added in some of our traditional favorites with hashbrown potatoes, turkey bacon and scrambled eggs with a little cheddar cheese.

We have a bottle thingy that we usually fill with the batter and David makes special designs for the kids like princesses, trains and whatever they ask for that day. I was the one cooking this particular morning and I just decided to make some pumpkins. Of course I did, Cuz that's just cute.

We enjoyed our morning and I even tried making the pecan butter syrup like the recipe called for. I have to say I didn't love the syrup and probably just prefer it with regular maple syrup for the future. But the pumpkin pancakes were PERFECT!!

SCONES


When I think of these Scones - i always think of my friend Sue and the time we spent together while our husbands were on staff at a church in Washington D.C. I was childless and jobless at the time and Sue and I had connected in a way that I just loved her right away. Our sense of humor was the same (twisted) and we both loved to laugh at the things that should have made us cry. She was such a bright spot for me in that season of life where infertility threatened to take over my mind, body and soul and it was just plain refreshing to be with her.

We spent every Tuesday together for about a year right after she had her 2nd son, Will. We did all manner of things such as get coffee, go to Target, play with the boys and then we would also......BAKE. Well, she would bake and I would just watch her do her magic in making me up something yummy. She made the BEST salads in the universe and she also made these healthy and delicious yogurt muffins that will warm you up inside.

But my favorite was when she would make me these SCONES. You can make them plain and add your favorite jam (I always like blackberry) or you can do what I typically do and add a cup of chocolate chips to it and make your family leap with joy!

NO matter how you make them - they will be amazing.

I whipped up a batch this morning to take to the teachers that work in Little Girl's carline at preschool. We had enough to bring over to my friend Julie and her boys and for me, Baby Boy and Little Girl to have one ourselves.

Perfect Breakfast.

Here's the Recipe. Enjoy.

SCONES:

Preheat oven to 400 degrees.

2 cups flour
4T Sugar
1 T Baking Powder

MIX ALL TOGETHER

Then add:

1/2 Cup (1 cube) butter cut in with pastry cutter until crumbly (I cube up my cold butter before I throw it in)

Mix with 1 Cup Buttermilk (or nonfat plain yogurt)

**Also - if you don't have either on hand, just add 1 Tbsp of lemon juice or vinegar plus enough milk to make 1 Cup and that will be your buttermilk). I have done all 3 - ALL are great.

YOU CAN ADD CHOCOLATE CHIPS HERE IF YOU WANT TO.

Pat into round on a floured cookie sheet. Sprinkle with sugar. Cut into 8 pie wedges. Separate onto cookie sheet.

Bake for 12-15 minutes until lightly golden brown on the bottom.
