Mini Corn Dog Muffins

My computer has a new hard-drive and I am inspired by the New Year. I plan to be back on here and blogging fun recipes and sharing the food that we eat here around our home. I hope you will keep reading and comment along the way. Thanks for letting me share my life with you on my two blogs - here and over at Me-Moddy.

On to the food.

Most of you have heard of the lovely Pinterest site. Well, I had seen these little guys floating around on there and then my BFF Julie sent me over the recipe and raving reviews that "I must try them!".

Mini Corn Dog Muffins



The recipe calls for a box of Jiffy mix, but her and I both happened to have some Trader Joe's Cornbread mix on hand and used that instead. They looked so fun and cute. I couldn't wait to try them.



Well, here's the verdict.

Parents Review: We loved them and dipped them in mustard just like we would a corn dog and they tasted EXACTLY like a Fair corn dog. Sweet and yummy and poppable right into your little mouth. Super great.

Kids Review: Little Girl (who doesn't like her food co-mingling) ate a couple but shredded the muffin off the hot dog and ate it in a huge mess. Bummer. Baby Boy on the other hand - ate 5. Huge hit!!

Pretzel Pizza Bites



I made these Pizza Pretzel Bites that I found on a really fun recipe blog site called Two Peas and Their Pod. I've only been to their site a few times, because I actually believe they are vegetarian, so a lot of their recipes aren't totally my thing, but this one was DEE-LISH. Here's a link to their post with the recipe and also their very beautiful pictures that put mine to shame. :-)

It also was very TEDIOUS. Shew! Wow. I've never made anything like this from scratch and it was a job. I actually think I would like to try their pretzel bites with a home-made cheese sauce and it would probably only be half the time since I wouldn't have to roll each one out, stuff it, pinch it closed and then do that all again 5 dozen more times. Yikes.

I made them for my lifegroup girls when we all got together on Friday night. They were a huge hit, but again, I don't think I have enough time to ever make them again. :-)




I used Turkey Pepperoni and Mozzarella cheese. I don't think I put enough in there, but it was great anyway!!

Parents Review: Dave and I loved them and kept popping them like candy

Kids Review: Mak wasn't a fan of the pepperoni inside, but no huge surprise there. Michael - I had to cut off because he ate so many!

I am cooking a pork roast in the crockpot right now with taters and veggies and the smell is awesome. I will post the recipe this week.
