Monster Cookies



Did any of you have these as a kid?

They have a little bit of all your favorite flavors rolled into one cookie!

M&M's!! Oatmeal!! Chocolate Chips!!! Peanut Butter!!!



I have lovely memories of my mom making these when I was little and I found a recipe from none other than Paula Deen to kick it up a notch.

Here's the recipe.

There is no flour in these cookies. The oats act as flour and you add baking soda to give them some fluffiness. I made these to take to my nephew's "Cookie Monster" 1st birthday party this past weekend. Huge hit!!

No Bake Graham Cracker Cookies



My mom has made these little dreamboats every year for our family reunion for as long as I can remember. I can't picture any other time she makes them, but they are a treat to look forward to. I love the creamy frosting on top, the pecan-pie-like filling in the middle and the soft and yummy graham crackers mixed in. They are chilled and served sliced into little bars.

A-ma-zing.

Here's her recipe.

In a 9X13 pan, put whole graham crax to cover bottom of pan.

Filling:

Melt 1 Cup butter, add 1 Cup Sugar, 1/4 Cup milk and 1 beaten egg. Bring to full rolling oil. Remove from heat. Add 1 Cup chopped nuts (I used pecans), 1 Cup Coconut and 1 Cup crushed graham crax.

Spread this over the crax in the pan and cover with whole graham crax.

Cover with icing made of 1/4 Cup butter and 2 Cups sifted powdered sugar and just enough milk to mix. Beat well and ice the bars.

Put in fridge for 24 hours. Then cut into small squares.


Try not to eat them all at once. You will get sick. Trust me, I know from experience.

Kids Review: Won't touch with a ten foot pole - just like pecan pie. :-)

Ooey Gooey Chocolate Cookies & Chicken Salad



Sorry. I didn't make these. But I want to!!!

I have been craving these gooey treats for a long while now and my favorite place to purchase them is from a local bakery called Beth's Bake Shoppe. I have tried a couple of recipes recently that I found online to try to replicate them. One was far from what I was going for and the other one got me closer, but not quite right.

I am calling on you for help. Have you had a cookie such as this? Seen a recipe for something like this?


I need you! I am just not seeing anything online that is cutting it, so I am pulling from my second resource - YOU! :-)

So, I am on a mission. I bought this cookie (plus one more because they seemed small) today to remind myself of the flavor and look at the texture - ya know - for research. My commitment to food scares me.

Another mission I have been told that I need to be on is to find a recipe for great chicken salad sandwich. A friend named Amber has mentioned that another local shop - Hebrews Coffee - has an amazing one.

Guess what I feel compelled to do?

Well, go purchase a chicken salad sandwich from Hebrews for starters......for research. Once I see what's in it and if I even like this chicken salad that I am told is amazing - I will start scanning the internet and doing some sample work. I may even call upon you all again. Stay tuned for my discoveries!

I am excited.

I also apologize that now I've made you hungry for chocolate and also for chicken salad sandwiches.

Good for you Cookies


Don't you love that all these words are in the same recipe title?

I have had this recipe forever and ever. I found it in a cookbook that I purchased when I first got married (nearly 14 years ago) and it's called "The Joy of Hospitality". It's basically a culmination of recipes from a bunch of ministry women, pastor's wives and Godly women who love to entertain.

It's kind of your local church cookbook on steroids. I love it. 2 of my favorite recipes have come from this book and this is one of them.

My friend Kelley, who use to be my next door neighbor, is a huge fan of these and I think of her every time I come across the recipe. In fact - she is getting some of these I made this weekend. :-)

If you read my main blog over at Me-Moddy, you'll know I refer to my 2 beautiful children as Little Girl (our 5 year old daughter) and Baby Boy (our 2 year old son). We adopted both of our children through 2 amazing experiences and our lives have never been the same since.

Any-hoo. Little Girl had more energy than was necessary for a 5 year old on a Saturday night and my first thought was, let's bake together and I'll pump you full of sugar.

This should totally calm you down.

Even though these cookies are titled "good for you" - it doesn't mean that there isn't sugar and oil involved, because they are. But - so is Wheat Germ and whole wheat flour and raisins and almonds and many other things. If you have ever had an "oatmeal scotchie" (this is what my mom called them) - this is what I think they kind of taste like.

REALLY AMAZING.

I've never tried to substitute the oil for applesauce or anything like that, but I bet you could. I am not a great substituter, because when I want something good, I don't really like to sacrifice much taste, so that's just me. But, if anyone tries it, will you please tell me how it tastes and if you liked it?? I would love to know.

O.K. Well, the cookies are to die for, so I'll just get to it.

Here's the recipe.

2 eggs, beaten
1 cup oil
1 cup raisins
6 oz. butterscotch chips
1 cup wheat germ
2 cups rolled oats
1 tsp baking soda
1/2 tsp vanilla
2 Cups brown sugar
1/4 cup buttermilk (again, you could use a little lemon juice plus enough to make 1/4 cup if you don't have any)
1/2 cup chopped almonds
1 cup white flour
1 cup whole wheat flour or graham flour
3/4 tsp salt
1/2 tsp baking powder

Preheat oven to 350 degrees. Combine ingredients in the order listed. Drop by teaspoonful onto a greased baking sheet. Bake for about 10 minutes or until light brown. Makes 4-5 dozen.

Peanut Butter Chocolate Chip Cookies


I have been making these cookies since I was still living at home with my parents and using a curling iron to style my long hair.

I have shared them before over at my main blog, but since I am trying to get all my recipes organized over on this site, I figured I would post it today since I made them this week.

If you make them with the little cookie scooper thingy, then you get these perfect little ice-cream-scoop looking mounds of yummy goodness. I bake these almost a little undercooked when I pull them out of the oven, and then they cook a little more after I remove them. This way they seem to stay super soft and amazing.

Here's the recipe I use. I add about 1 cup of chocolate chips per batch. They taste amazing and they freeze really, really well. I have frozen just the dough before and then took it out, thawed it a little and then baked the cookies, and I have also just made up the cookies and froze them, and then set them out for an hour or so before I want to eat them and they taste fresh out of the oven.

Lastly - I made nothing exciting for dinner tonight. I was by myself with the kids for our meal, so they had mac-n-cheese and hotdogs and green beans and I made a whole wheat roll-up filled with 2 eggs, cheese, salsa verde and sour cream. No recipe - just yummy. :-)
